Don Millan vinegar is made from Palomino grapes from the Jerez region which is then complemented with a reduction of Pedro Ximenez sherry whose grapes have been sun-dried until they become raisins, concentrating all the sugars and then aged in wood barrels. The resulting Don Millan Vinegar is an exquisite sweet and sour vinegar that has the peculiar aftertaste that others do not have. Smelling phase: Perfect balance between the deep aromas of the classical process of converting the Jerez grapes into rasins and the refreshing aromas of the natural acetic acid and ethyl acetate. Tasting: The product has a warm dark mahogany color. Smooth and bitter-sweet to the palate. Full bodied, substantial, and with a lot of depth. Recommended use: Specially recommended for salads and vinaigrettes; and to liven-up duck and veal meats.
